For the third year in a row.

But you will need an aligned mindset to appreciate this restaurant.

You won't get a steak, you may actually not get any meat at all.
There won't be a big chunk of fish, lobster or stuff like that.
You won't be overwhelmed by species, powerful tastes or so.

But it is exciting, it is exciting to start with a manifest to only use nordic ingredients. 
So the courses will be delicate, beautiful, fresh, crisp and enhance the freshness on what ever they can get their hands of. Like pine, birch, herbs and flowers.

With a 45 chef staff + waiters the service is accurate and close to perfection. There is absolutely nothing to complain about when it comes to the execution.

But of course, not everyone likes live shrimps, raw razorclams, bone marrow and a high ratio of veggies.

If you however, are curious, have a mindset to stretch your mind and limits Noma will give you an experience that will beat everything you've ever experienced.

Don't compare it with French Laundry, Gordon Ramsay or whatever, this is just so different.

After reading some of the reviews here on tripadvisor I get kind of surprised. I'm really not sure of what some people are expecting of alinea.

For sure, Alinea is one of the very best restaurants on the planet and it happens to be located in Chicago. However, the restaurant has absolutely nothing to do with American cuisine or food traditions. But there it is, and oh boy they do know how to create a lovely experience (i.e. no big pieces of meat, not staff coming every minute asking if everything is great a very non American experience if you ask me, being european).

However, fantastic presentation, awesome precision, playful dished that challenges your imagination, your expectation and tastebuds. Everything we got tasted fantastic and was just perfect in its composition, but the plate with 60 tastes to combine with the lamb was just mind blowing. 

Staff is knowledgeable and alert and enthustiastic of what they do.

And the price? It's a bargain for what they offer. I'd just prefer that they've been located in Barcelona or so, but I'll survive.

The French Laundry

And it wasn't due to the fact "rated as the most expensive in US", which I read somewhere. 
Because it worth every penny.

It wasn't due to the extremely hard process of getting a table.

It was for the callotte de bœuf grillée served as the main course. This piece of perfectly cooked and most delicious piece of meat made my cry, of joy.

Well it was more to it. TFL is a lovely cozy and romantic place in Yountville in Napa valley. The staff is just fantastic. Friendly, knowledgeable, curious, interested and passionate of what they are doing. 

The staff in the kitchen is sort of the same. Add perfect ingredients an impeccable precision and voila, there you have a tasting menu that you will never ever forget.

Of course, the wine list was spectacular, the bread delicious.
